A classic Asian-style blade, the Santoku embodies features of a chef's knife and a cleaver. With numerous uses from slicing and dicing to mincing and julienning, the Calphalon 5 inch Santoku represents a chef's knife in its wide range of applications. The wide blade curves downward to a point at the tip similar to a cleaver and has a blade surface large enough for easily scooping up dicing onions, peppers or herbs. Made of high-carbon German stainless steel, the fully-forged blade has 'kullens' (or indentations) along the edge to prevent food from sticking to the side when slicing and dicing.
